How long can an Instagram caption be?

Up to 2,200 characters, and the caption is checked against that limit. Cover text ideas sit below a divider and don't count toward it.

How many hashtags should I use on Instagram?

Instagram recommends 3 to 5 and may limit posts to 5, so the default here is 5. You can set anything from 0 to 30; above 5 you get a warning, and more than 30 is an error.

How much of a caption shows before “...more”?

About the first 125 characters, so that's where the hook goes. The writer puts it in the first line and warns you if that line runs past 150 characters.
